So I am wondering which would be better:
Dual ATI Radeon HD 4890 - 1GB
or
One NVIDIA GeForce GTX 295 - 1792MB

Lasting longer is so true. ATI has many features, but are very unstable and run pretty hot at times. They are good cards but their reliability is not as strong as NVidia cards.

So since the ATI is dual it will bring me more video power?
but
The Nivida is a single card, but has some power to it and is more reliable?
you will not be disappointed in the performance of the nvidia card
+ ive heard SLI/Crossfire don't work well with some games

So if I have 8 GB of RAM and get the Nvidia, how high of graphics do you think Crysis will run.

I have a 260 and can run Crysis on Very High at 1680x1050 with 4xAA, I think you'll be good.

You'll have no probs running it at all!
I can run it on Very High 2×aa on my GTS250 (which is medium end, yours is high end)

I've got the HD4890 I like it. Great graphics, put them in Crossfire and you'll be fine.!

I definitely go with the NVIDIA GeForce faster several games than compare to the ATI,i had great experience with NVIDIA GeForce without any problem.
